Christmas a time of heightened everything……..emotions, indulgence, expectations, offerings etc. etc……….
In a constant state of ever changing flux and re-invention we opened Bricks and took great delight in the pop up restaurant “The Brewers Kitchen”……………it lasted the duration of the holidays and offered seasonal winter foods along with a tasting of three of our draught products…..Winter Ale, Cúl Dorcha and Béal Bán……. Away from my brewers pot still needing to satisfy that hunger for stirring and mixing so…….. the goose and ham became terrines, rose hip syrup drizzled over alongside marinated figs in our Festive Imperial Black Ale, pickled grapes, cheeses and smoked salmon(which I source from Iasc Uí Mhathuna, and really love its flavour) An experiment with brewers yeast, goose fat, milk and flour produced lovely little dough balls which when served warm were divine!!!!!!
It’s all over now though! January……… but surprisingly I can see the sky today and Mt Brandon covered in snow……………did you know the sky is blue, not murky grey?!!
Slowly we are moving into the realms of a more readily accessible , brewery, our draught kegs now being installed throughout the Town of Dingle and the Peninsula. Ever conscious of the help and assistance we receive from people within the industry I would make mention of Peter Mosley, Brewer with the Porter House, who has given invaluable advice for many years and most recently a large number of kegs on loan so we might get the beer to town!
Our idea is to offer a choice of rotational beers through our 3 core range to the specials we are so fond of experimenting with. Offering a lower abv % with the likes of Carraig Dubh, Cúl Dorcha and Béal Bán and toying with higher abv % in our specials drawing inspiration from the wildness of our surrounding views and the garden we are so fortunate to be located in. It is with great pleasure that we finally reach this stage of our development, ever slower than most of our compatriots, we seem to unfold tentatively relishing in the journey itself confident in the knowledge that we were the first brewery in Kerry since the 1800’s, we are 100% authentic and brew and package our own beer, we are the most Westerly Brewery in Europe easily found on the Slea Head Drive part of the Wild Atlantic Way.
Speaking of which we have joined forces with some of the other Breweries along the WAW and Libby of Kinnegar Brewery, being a graphic designer, has put her skills to good use by designing a very informative brochure with all the Breweries to visit along the way. This gives the visitor an added incentive to travel the length of this the longest coastal drive in Europe.

Guinness belongs to the world now, and you don’t need to travel farther than your local to taste it. What you can’t experience at home is the Irish rebirth of the drink that moved Arthur Guinness in the first place. Take West Kerry Brewery, a two-room operation, along the side of a remote Kerry coast road, where Adrienne Heslin and Paul O’Loingsigh use well water that is fresh and limey and perfect for dark beers.

Adrienne and Paul are not alone, so why not sample some of the more than 80 ales, lagers and porters that are part this beer renaissance? Irish craft-beer site Jar.ie suggests a possible alterna-crawl with its list of top craft-beer pubs, among which Dublin’s 57 The Headline and L. Mulligan Grocers – with its focus on artisanal food – and three outposts of the Porterhouse chain are especially good examples. Another bonus: The route will take you into parts of town the tourist rarely goes. If you’ve already done the Joyce route, don’t worry: There’s no crossover
